Here is an overview of what talents to use as you level your Priest along with some level 70 talent builds. The best guide to playing a Priest I've found is at Killer Guides. You can always make your Priest better by getting a lot of gold and buying the best gear, to do that I strongly recommend using Valkor's Gold Guide for farming massive amounts of gold.

Priests are by their nature the masters of healing magic. They possess some of the best hit point buffs in game and can cure a variety of ailments. The Priest is the most desirable class of any traditional group because of its healing, resurrection, and buffing abilities. The Priest is typically underestimated in the area of damage but using either Holy or Shadow magic they are capable of dealing out quite a bit of damage. A Priest wielding shadow magic is considered one of the most feared PvP opponents in game. The Priest wears cloth armor but can usually withstand quite a bit of melee damage if prepared.

There is only one acceptable way to solo level a Priest efficiently no matter what anyone says. Using Shadow abilities the Priest can take a decent amount of damage and keep itself healed by using its health leaching abilities. The more damage done to an enemy the more health will be restored to the Priest, with the combination of Spirit Tap, there will be little or no downtime while soloing. Without shadow magic the most efficient way to level a Priest would be with a partner that can preferably tank while the Priest is used for healing.
When it comes to leveling to 30-40 as a Priest there aren't really any other options than to be a Shadow Priest. If you go Holy you'll find yourself lacking damage and you'll always be asking for a group to level effectively. As a Shadow Priest you can actually do some decent damage. Here is how to do it.
This build puts all its emphasis on PvP with Vampiric Touch and Shadow Word Pain. The above Shadow Priest leveling talents transition nicely into this powerhouse PvP build.
This build is highly customizable but focuses on being a very dedicated healer in raids and instances.
